Our grouse recipe this week has been kindly sent in from Sean who is the senior sous chef @blackswan_oldstead Black Swan, Oldstead which is a Michelin star restaurant in the heart of the north york moors with a 3 acre kitchen garden providing fresh produce daily. Roasted Grouse, Celeriac, Beetroot and Blackberry Sauce Ingredients: recipe will do 2 as a main course. 2 young grouse. (crown only)
2 large celeriacs.
500g red beetroot. 200g yellow beetroot.
200g candy beetroot.
500ml reduced brown chicken stock I tsp heather honey.
