600g minced venison, 1 large red onion sliced into rings, 100g diced onion, 20g flour, 5g ground cumin, 4 flat field mushrooms, 5g tomato ketchup, 20g stilton mayonnaise, 5g hp sauce, Milled salt & pepper, 4 ciabatta rolls.



  1. Place the mince, seasoning, onion, cumin. ketchup, and hp in a bowl and mix together
  2. Form four bugers from the mix and place into the refrigerater
  3. Fold the onion ring through the seasoned flour and shallow fry until golden brown
  4. Grill the burgers and mushrooms under a hot grill for three to four minutes each side
  5. Spread the ciabatta with the stilton mayonnaise and place in the mushroom and burger
  6. Serve with some mixed leafs and the onion rings
