4 venison steaks

4 goose eggs

400g blanched chunky chips

Milled salt & pepper


  1. Bake the chips in a hot oven after blanching
  2. Season the steaks and sear in a hot pan
  3. Cook for two minutes each side and rest for a minimun of five minutes
  4. Fry the duck eggs individually in little rosti pans
  5. Place the steak, chips and egg pan on a plate and serve
