SQuick and easy roast partridge dish, with distinctive and different flavours, with the added enjoyment of eating far too much garlic.
- Individual gralic cloves
- Lemon cut into eighths
Melt a healthy chunk of butter in a frying pan and sear the partridge on all sides into brown, roughly five minutes.
Allow the partridge to cool before seasoning both the outside and the inside of the bird. Stuff the cavity with as many lemons and garlic as possible.
Turn the oven up to 200oC and cook the partridges for 20 minutes.
Rest them for 10 minutes before tucking in... Do not forget to enjoy the roasted garlic as well!
